Put this in your configuration file (.emacs probably):

(setq org-export-latex-emphasis-alist
      '(("*" "\\textbf{%s}" nil)
        ("/" "\\emph{%s}" nil)
        ("_" "\\underline{%s}" nil)
        ("+" "\\st{%s}" nil)
        ("=" "\\url{%s}" nil)
        ("~" "\\verb" t)))
